Rick Stein visits Lucknow, a city celebrated as the curry capital of India, renowned for its rich culinary heritage. He embarks on a quest for the finest chicken korma and delves into the intricacies of crafting the perfect pulao. Immersed in the vibrant atmosphere, he joins a throng of revelers celebrating a significant Hindu festival, indulging in the region's festive cuisine. Traveling north to Punjab, he witnesses the traditional jaggery-making process and takes on the role of guest judge in search of the new 'Star Chef.' He prepares nimish, an ethereal dessert infused with saffron, pistachios, and cardamom, alongside a beloved Punjabi dish, paneer jalfrezi.
