Famous for its fresh seafood, Hai Phong also boasts the distinctive banh da noodle, known for its unique red hue and chewy texture, which locals prepare right at home. Luke then visits a skilled baker and observes the creation of mini baguettes. He takes the warm bread to a local café, where it’s paired with their celebrated homemade pâté to make banh mi, a staple dish of the region. Finally, Luke sets out to find the ideal fried shallots, a key ingredient in his culinary repertoire.
