With their reputations at stake, they face the daunting Skills Test under the critical gaze of judges Monica Galetti, Marcus Wareing, and Gregg Wallace. Marcus sets the first challenge, requiring two chefs to expertly prepare poussin, served on the bone alongside braised endive and a pear and hazelnut salad, highlighting their classical techniques.
