Back in the UK, Heston crafted a unique presentation of Peking duck, transforming it into a three-course meal featuring eight distinct dishes. He also visited a duck farm in Ireland that supplies 98 percent of the ducks used in Chinese restaurants across Britain, discovering what makes their breed perfect for Peking duck. Finally, he faced the challenge of achieving the ideal crispy skin without compromising the meat's moisture in his Bray lab.
